Mango Mojito Recipe

I figure you guys deserve something light and refreshing after reading my lengthy journal entries especially in this summer heat. It's been so lovely to know my husband hard work did not go in vein (his official title is "editor in chief"). Plus, I need an excuse to try out my kraft recipe cards ;)

So, here is a Mojito recipe with a twist, a Mangojito!! It's not exactly original since I had them during our Bali vacation in Motel Mexicola. But I could never order anything close to that in the States, so I decided to make my own especially when it's so easy to make! A little random facts about me, I LOVE mangoes! But not any mangoes, I'm obsessed with a very specific type of Indonesian Mango. It's called "Harum Manis" which means "sweet, pleasant scent" and it taste as good as it sounds! Can't find that in States either, but the small yellow mangoes are a good alternative for me.

So without further ado, here's the recipe!

Ingredients (for serving of 1)

-10 fresh mint leaves

-1/2 small mango

-1 ounce of fresh lime juice

-1 teaspoon of raw sugar

-1/2 ounce of simple syrup

-1 cup of ice cube

-1 1/2 ounce of white rum

-1/2 cup of sparkling water or club soda

-Lots of ice

 

Directions

-Place mint leaves, mango, and lime juice into a sturdy glass or a shaker. Use a muddler to crush them.

-Add sugar and simple syrup, muddle again.

-Fill the glass with ice

-Pour rum over ice. Fill the glass with sparkling water.

-Stir, taste, and add more sugar if desired.

-Garnish with extra lime wedge and mint leaves.

You can make them with or without rum. I don't drink much alcohol so I have it as a virgin, but Alex can't have enough of the real version! So, enjoy responsible :)
